Aicanassa’s Lembas recipe


100 grammes butter
125 grammes honey
pinch of salt
1 tablespoon cinnamon
100 grammes self-raising flour
1 tablespoon milk
100 grammes of diced almond
1 vanilla pod
2 tablespoons of orange peel
2 teaspoons of orange flower water
Put the orange peel and almonds in a mortar and pestle and ground until fine.
Put the milk with the vanilla pod on a slow fire and let it seep for fifteen minutes. After this time, scrape the marrow from the pod and mix the milk with the orange flower water. Let cool.
Knead the flour, honey, butter, salt, cinnamon and the milk mixture to a firm dough. Finally, knead the almond mixture into the dough. Leave the dough in peace for at least one hour.
Pre-heat your oven to 160°C. Roll your dough into large flat cakes. Put them on a baking tray covered in baking paper or grease.

Bake for 25 to 30 minutes until your lembas is golden brown. Leave them to cool for 10 minutes before removing them from the baking tray.
Be aware of hungry hobbits trying to steal your lembas from the window sill.
